In support of the university’s educational mission and commitment to environmental sustainability, Residential & Dining Enterprises Stanford Hospitality & Auxiliaries seeks to reduce environmental impact, preserve resources, and show sustainability in action, while meeting the needs and desires of students, staff, and faculty. Driven by a student culture steeped in environmental awareness and innovation, Forbes Family Café opened in December 2014 as the first flexitarian café on campus.

This novel concept is aimed at promoting healthy eating and reducing meat consumption by offering creative, plant-strong, high-protein meal options and sustainable meat choices. It appeals to vegans, vegetarians, and diners simply interested in reducing their meat intake. Since its highly anticipated opening, Forbes Family Café has been a popular campus dining preference for breakfast, lunch, and dinner. It manifests the commitment to sustainability made by staff and students and embraces how their healthy lifestyles and diets have evolved. Vendors follow sustainable farming practices, with 75% of seasonal offerings locally sourced within 100 miles of campus.
